Having a Chinese mom from Malaysia has definitely been a great influence on my view on food; it definitely kick started my love for good food 😋 There's a huge food culture due to the diversity in ethnicity and it's such a melting pot: Chinese, Indian (my love for banana leaf curry 😍), Malay, but also Portugese influences, Thai etc.
One of my favorite dishes is nasi lemak (which I actually only started to appreciate when we moved to Holland). It's also known as Malaysia's national dish and is a popular for breakfast. No issues eating a warm meal three times a day 😎
The basic nasi lemak is coconut rice with fried ikan bilis (ansjovis) with peanuts, egg (preferably salted duck egg) and Malaysian style sambal. I served it with some extra beef rendang, pickled veggies and cucumber.
My mom's sambal is till today the best for me 💕 whenever she makes it she'll make extra to distribute to friends and family 😊 my version is by far not as tasty as hers, hope one day I can make mine just as good as hers! #momisthebestchef
